Gecko Hospitality is proud to partner with a premier waterfront hospitality destination on Maryland’s Eastern Shore to identify a Sushi Chef for an upscale dining concept.

This is a leadership opportunity for a technically strong sushi professional who is ready to take ownership of sushi production while contributing to a high-level banquet and event program. Position Overview

The Sushi Chef will oversee sushi production and execution for the outlet, ensuring consistent quality, presentation, and food safety standards. This role blends hands-on sushi craftsmanship with operational accountability and leadership presence.

The Sushi Chef will support banquet and special event production while collaborating on menu refinement and ongoing culinary development.

Key Responsibilities

• Execute nigiri, sashimi, and specialty rolls with precision and consistency

• Maintain proper rice preparation, seafood handling, and knife technique

• Uphold strict HACCP and food safety standards for raw and ready-to-eat products

• Oversee sushi station setup, sanitation, and quality control

• Assist with menu development and seasonal features

• Support banquet and private event sushi production

• Monitor food cost, portion control, and waste reduction

• Collaborate with culinary leadership and front-of-house teams

• Maintain professional standards aligned with upscale hospitality

Qualifications

• Intermediate-level sushi experience in a reputable restaurant or hospitality setting

• Strong intermediate knife skills

• Solid understanding of seafood sourcing, handling, and food safety

• Experience executing sushi in high-volume or event-driven environments preferred

• Leadership exposure or supervisory experience a plus

• Reliable, detail-oriented, and performance-driven

Compensation & Benefits
