Job Description:
Kamome Japanese Restaurant is located at #2222-4949 Canoe Pass Way, Tsawwassen, BC V4M 0B2. We are currently looking for a permanent, full time Sushi Chef (Senior Level). If you are interested, please submit your application by e-mail or mail.
Position: Sushi Chef (Senior Level)
Wages: CAD$36.60-37.00/hour (depending on skills and experiences)
Types: Full-time, Permanent (various shifts, including evenings, weekends, and holidays)
Working hours: 30~40 hours/week
Benefits: 4% of vacation pay
Job Duties:
• Plan and direct the preparation, cooking, and presentations of sushi and other Japanese dishes;
• Lead sushi station operations and coordinate food preparation activities to ensure efficient workflow and timely service;
• Supervise and coordinate the activities of kitchen staff;
• Develop specialty sushi items, signature dishes, and innovative recipes to enhance menu offerings and customer satisfaction;
• Ensure sushi dishes meet high standards of quality, presentation, and consistency;
• Estimate seafood, rice and other food requirements and assist in controlling food costs;
• Oversee the selection, inspection and proper handling of fish and seafood to ensure freshness and quality;
• Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning;
• Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques;
• Maintain food safety, sanitation and hygiene standards in accordance with provincial regulations;
• Prepare and present a wide variety of sushi and other Japanese dishes, including specialty sushi, chef’s specials, and customized dishes for customers with food allergies or special dietary requirements.
Job Requirements:
• Completion of secondary school is required;
• Minimum 5 years of experience in commercial food preparation, including two years in a supervisory capacity and experience as a chef, is required;
• Proficiency in fish filleting techniques, including cleaning, deboning, and slicing, is required;
• Skills demonstrations, including tasting and plating assessments, may be required.
