Job Duties:
• Plan, organize and oversee daily food preparation and cooking operations to ensure consistent quality and presentation of Japanese dishes.
• Supervise and provide hands-on direction to chefs, cooks and kitchen staff, assign duties and ensure recipes, portion sizes and plating standards are followed.
• Prepare and oversee sushi and sashimi preparation using advanced Japanese knife skills, including proper trimming, slicing, portioning and handling of fresh fish and seafood.
• Develop, test and standardize new menu items, sushi rolls, sauces and seasonal specials while maintaining food quality and cost targets.
• Train kitchen staff in sushi rice preparation, fish handling, sushi and sashimi techniques, hot-kitchen cooking methods and proper equipment use.
• Plan and review menus and establish preparation, cooking, garnishing and presentation standards for dine-in and takeout orders.
• Estimate food requirements, monitor food costs and inventory, and determine ordering quantities for fish, seafood, produce and other kitchen supplies.
• Inspect ingredients and prepared foods for freshness, quality, proper storage and safe handling.
• Maintain and enforce food safety, sanitation, cross-contamination prevention and allergen-control procedures.
• Monitor kitchen staffing and workflow during service and coordinate sushi-bar and hot-kitchen operations.
• Identify kitchen equipment and utensil requirements and arrange necessary maintenance, repairs or replacement.
• Maintain records of food usage, inventory, waste and kitchen operating costs, and recommend improvements to operational efficiency.
Job requirements:
• Experience: 3-5 years of professional cooking experience, including substantial hands-on experience preparing Japanese cuisine is required
• Education: Completion of secondary school is required
• Language: English
