Tasks
Maintain records of food costs, consumption, sales and inventory
Instruct cooks in preparation, cooking, garnishing, and presentation of food
Supervise cooks and other kitchen staff
Prepare and cook food on a regular basis, or for special guests or functions
Prepare and cook meals or specialty foods
Requisition food and kitchen supplies
Plan menus and ensure food meets quality standards
Job Duties:
• Prepare and cook a full range of traditional South Indian dishes, including but not limited to: dosas, idlis, vadas, sambar, rasam, biryanis, curries, and a variety of regional specialties.
• Plan and prepare daily menus, ensuring a diverse and appealing selection of dishes.
• Follow traditional South Indian recipes and cooking methods to maintain authenticity and quality.
• Monitor food stock and order supplies as needed, ensuring all ingredients are fresh and of high quality.
• Oversee kitchen operations, including food preparation, cooking, and plating, in a clean and organized manner.
• Adhere to all food safety and sanitation regulations (HACCP principles, etc.) to ensure a safe and hygienic working environment.
• Collaborate with the kitchen team to ensure timely and efficient service during peak hours.
• Train and mentor junior kitchen staff on South Indian cooking techniques and food preparation.
• Maintain a positive and professional attitude in the workplace.

Other: Minimum of 3 years of experience as Chef specializing in traditional South Indian cuisine req’d; Cook's trade certification or equivalent credentials, training and experience are required; Deep and comprehensive knowledge of South Indian cooking techniques, including use of tandoors, clay pots, and other specialized equipment; Expertise in identifying and using a wide variety of South Indian spices, herbs, and ingredients to create authentic flavor profiles; Ability to prepare a diverse range of South Indian regional dishes (e.g., from Tamil Nadu, Kerala, Karnataka, Andhra Pradesh, and Telangana); Knowledge of traditional food preservation and fermentation techniques relevant to South Indian cuisine; Strong understanding of dietary requirements and the ability to accommodate specific customer requests (e.g., vegan, gluten-free, etc.); Excellent knife skills and a high level of dexterity; Ability to work under pressure and in a fast-paced environment; Strong communication and teamwork skills; Must be able to stand for extended periods and lift heavy objects; A passion for and deep respect for traditional South Indian culinary arts.
