Senior Sushi Chef Job

Gogo Sushi is located at 504-11850 Oceola Rd., Lake Country, BC V4V 2T5. We are currently looking for a permanent, full time Senior Sushi Chef. If you are interested, please submit your resume by e-mail or mail.

Position: Senior Sushi Chef
Wages: CAD$35.00-37.00/hour (depending on skills and experience)
Types: Full-time, Permanent (various shifts, including evening, weekends, and holidays)
Working hours: 30-40 hours/week
Benefit: 4% of vacation pay

Job Duties:
• Plan and direct the preparation, cooking, and presentations of sushi and other Japanese dishes;
• Supervise and coordinate the activities of kitchen staff;
• Plan menus and create special recipes;
• Ensure sushi dishes meet high standards of quality, presentation, and consistency;
• Estimate seafood, rice and other food requirements and assist in controlling food costs;
• Oversee the selection, inspection and proper handling of fish and seafood to ensure freshness and quality;
• Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning;
• Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques;
• Maintain food safety, sanitation and hygiene standards in accordance with provincial regulations;
• Prepare and present sushi dishes, specialty sushi, chef’s specials, and customized dishes for customers with food allergies or special dietary requirements

Job Requirements:
• Completion of secondary school;
• Minimum 5 years of experience in commercial food preparation, including two years in a supervisory capacity and experience as a chef, is required.
• Proficiency in fish filleting techniques, including cleaning, deboning, and slicing, is required.
• Skills demonstrations, including tasting and plating assessments, may be required.
