Senior Sushi Chef Job

Hiraku Sushi Japanese Restaurant is located at #101-3380 David Ave., Coquitlam, BC V3E 0J5. We are currently looking for a permanent, full time Senior Sushi Chef. If you are interested, please submit your resume by e-mail or mail.

Position: Senior Sushi Chef
Wages: CAD$35.00-37.00/hour (depending on skills and experience)
Types: Full-time, Permanent (various shifts including evening, weekends, and holidays)
Working hours: 30~40 hours/week
Benefits: 4% of vacation pay

Job Duties:
• Plan and direct the preparation and cooking of sushi and other Japanese dishes
• Supervise and coordinate the activities of kitchen staff
• Plan menus and create special recipes
• Ensure sushi dishes meet high standards of quality, presentation and consistency
• Estimate seafood, rice and other food requirements and assist in controlling food costs
• Oversee the selection, inspection and proper handling of fish and seafood to ensure freshness and quality
• Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning
• Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques
• Maintain food safety, sanitation and hygiene standards in accordance with provincial regulations and prepare sushi and other Japanese dishes on a regular basis

Job Requirements:
• Completion of secondary school;
• Minimum 5 years of experience in commercial food preparation including two years in a supervisory capacity and experience as a chef are required.
• Skills demonstrations, including taste and plating abilities, may be required.
• Proficiency in fish filleting, including cleaning, boning, and slicing is required.
