Head Sushi Chef Job

Sushi Sen Japanese Restaurant is located at 40382 Tantalus Rd., Garibaldi Highlands, BC V0N 1T0. We are currently looking for a permanent, full-time Head Sushi Chef. If you are interested, please submit your application by e-mail.

Position: Head Sushi Chef
Wage: CAD $39.00 per hour
Types: Full-time, Permanent (various shifts including evenings, weekends, and holidays)
Working hours: 30-40 hours per week
Benefits: 4% vacation pay

Job Duties:
• Plan and direct the preparation and cooking of sushi and other Japanese dishes;
• Supervise and coordinate the activities of kitchen staff;
• Plan menus and create special recipes;
• Ensure sushi dishes meet high standards of quality, presentation, and consistency;
• Estimate seafood, rice and other food requirements and assist in controlling food costs;
• Oversee the selection, inspection and proper handling of fish and seafood to ensure freshness and quality;
• Oversee the preparation of sushi rice and ensure proper texture, temperature and seasoning;
• Train and mentor junior sushi cooks and kitchen staff in sushi preparation techniques;
• Maintain food safety, sanitation and hygiene standards in accordance with provincial regulations;
• Prepare and present sushi and Japanese dishes, specialty dishes, chef’s specials, and customized dishes for customers with food allergies or special dietary requirements.

Job Requirements:
• Completion of secondary school is required
• Minimum 5 years of experience in commercial food preparation, including two years in a supervisory capacity and experience as a chef, is required
• Proficiency in fish filleting, including cleaning, boning, and slicing, is required
• Skills demonstrations, including taste and plating abilities, may be required
• Language at work: English
