Job Description:
Double Double Japanese Food Inc. (operating as; Ikkousha Chicken Ramen) at 257 Queen Street West Toronto Ontario and is looking for a Head Japanese Ramen Specialty Chef for salary of; $36.00 per hour for 30.0 hours per week.
Qualifications;
- Must have a minimum of three years or more of experience in creating, preparing, cooking and presentation of a variety of authentic Japanese Hakata style Ramen noodle soup dishes and stocks, hot appetizers, rice dishes and Ramen toppings.
- Must have three years (or more) experience in creating new recipes of Japanese Ramen noodle soup dishes and stocks, hot appetizers, rice dishes and Ramen toppings
- Must be able to work evenings, weekends and overtime as assigned
- Must be able to work well in a fast-paced environment
- Completion of secondary (high) school is required.
- Basic oral English is required.
Job Duties
• Prepare and cook and present a variety of Japanese Hakata style Ramen (noodle) soup stocks (Tori Paitan; chicken white broth, Tori Gyokai; combination of chicken and fish) according to company standards
• Prepare and cook and present Japanese hot appetizers, Ramen toppings such as Cha-shu (Braised chicken), Japanese style dumplings, deep fried chickens and Japanese rice-bowl dishes
• Check proper portion sizes for all dishes and ensure that they meet company quality standards
• Prepare, cook and present online take-out orders and dine-in customers
• Supervise chefs and cooks in their relevant duties of preparation, cooking and handling food.
• Managed kitchen staff by recruiting, orienting, training, assigning and evaluating their performance.
• Instruct and oversee the training of chefs and cooks in the preparation and technique of Ramen noodle dishes, cooking and presentation of appetizers.
• Check food preparation and kitchen to ensure observance of safe, sanitary food-handling practices in accordance with company health and safety guidelines.
• Estimate expected food consumption, maintain an inventory record and discuss with management when re-stocking supplies is required, and order necessary items.
• Create, prepare and present new Japanese Hakata style Ramen (noodle) dishes (Tori Paitan; chicken white broth, Tori Gyokai; combination of chicken and fish), appetizers, rice-bowl dishes for “special seasonal menu items”
