-Lead and mentor the kitchen team, fostering a supportive and collaborative work culture.
-Develop, standardize, and update menus featuring authentic regional Mexican cuisine while maintaining consistency in recipes, food quality, and presentation.
-Plan and direct food preparation and cooking activities to ensure efficiency, consistency, and adherence to established recipes and standards.
-Ensure consistent quality, flavour, and presentation of all dishes, including tacos, enchiladas, burritos, fajitas, house-made salsas, and other traditional specialties.
-Estimate food requirements and labour costs, and monitor kitchen expenses to maintain profitability.
-Manage inventory levels and order supplies and ingredients as needed.
-Recruit, train, and supervise cooks and kitchen staff.
-Maintain high standards of cleanliness, food safety, sanitation, and kitchen organization at all times.
-Collaborate with ownership and front-of-house leadership to enhance menu offerings and deliver an exceptional guest experience.

Job Requirements:
-Completion of secondary school is required.
-Cook's trade certification (Red Seal or equivalent), or a combination of relevant culinary training and experience, is required.
-At least 3 years of experience in commercial food preparation, including experience preparing authentic Mexican cuisine and traditional regional specialties.
-Minimum two years of experience in a supervisory role such as Sous-Chef, Chef, or Executive Chef.
-Experience in menu planning, recipe development, food costing, inventory management, and overall kitchen operations.
-Experience recruiting, training, and supervising kitchen staff.
-Extensive knowledge of authentic Mexican cuisine, including traditional regional recipes, cooking techniques, specialty ingredients, and menu development.
-Ability to work in a fast-paced environment and a flexible schedule, including evenings, weekends, and statutory holidays, as required.
