Qualifications:
- Ability to communicate in English orally and in writing is required;
- Completion of secondary (high) school is required;
- 3 years to less than 5 years of experience working as a chef or cook in a commercial restaurant kitchen is required;
- Practical experience in traditional Sanuki-style udon preparation is required, including specialized skills in dough handling, noodle production, and precise cooking techniques that involve controlling temperature, humidity, and timing.

Job Duties:
- Plan, organize and oversee daily kitchen operations to ensure efficient workflow and consistent food quality;
- Supervise, coordinate and schedule activities of cooks and kitchen staff;
- Develop, standardize and maintain traditional Sanuki-style udon and dashi recipes to ensure product consistency and quality control;
- Oversee in-house preparation and cooking of hot and cold udon noodles, donburi dishes, sushi, sashimi and specialty menu items;
- Participate in menu planning, seasonal menu development and new dish creation;
- Monitor inventory levels, requisition food and kitchen supplies, and control food costs and waste;
- Ensure compliance with food safety, sanitation and workplace safety standards;
- Train kitchen staff in food preparation techniques, plating presentation, portion control and safe food handling procedures;
- Prepare and oversee preparation of dishes for customers with food allergies or dietary restrictions;
- Maintain quality control standards for food preparation, presentation and portioning.
