Job Description:
FiAMMA Ristorante is a refined Italian restaurant offering authentic Italian cuisine with a modern touch, inspired by the flavours of Puglia, Italy. At this time, we are looking to hire an experienced and dedicated Chef to lead our kitchen team, oversee daily food preparation and kitchen operations, and ensure the highest standards of quality, presentation, and service.
RESPONSIBILITIES:
• Lead and oversee all food preparation and kitchen operations to ensure a consistently high standard of quality, presentation, and service.
• Develop menus, seasonal features, and specialty dishes that reflect the restaurant’s Italian culinary concept and fine dining standards.
• Create, test, and improve recipes while maintaining consistency, portion control, and presentation standards across all menu items.
• Plan food requirements, monitor ingredient usage, and maintain appropriate inventory levels for food, supplies, and kitchen equipment.
• Source and work with quality ingredients, including Italian specialty products, to support the restaurant’s menu and culinary direction.
• Prepare and oversee the preparation of specialty Italian dishes using traditional and modern culinary techniques.
• Ensure all food preparation, ingredients, and kitchen practices comply with food safety, sanitation, and quality standards.
• Consult with guests and clients regarding special orders, private dining requests, dietary needs, and allergy-related menu modifications.
• Supervise, train, and provide direction to sous-chefs, cooks, and other kitchen staff.
• Demonstrate cooking techniques, plating standards, and proper kitchen procedures to kitchen staff.
• Recruit, hire, train, supervise, and evaluate kitchen staff as required.
• Maintain a safe, organized, and efficient kitchen environment that supports smooth daily restaurant operations.
POSITION REQUIREMENTS:
• Completion of secondary school is required.
• Culinary diploma, cook’s trade certification, or equivalent culinary training and experience is required.
• At least 4 years of experience in commercial food preparation, including experience as a Chef, Sous-Chef, or similar senior kitchen role.
• Previous supervisory experience in a commercial kitchen environment is required.
• Experience with menu planning, food quality control, inventory, and kitchen staff supervision is required.
• Experience in a fine dining restaurant, or similar hospitality environment is an asset.
• Knowledge of Italian cuisine, ingredients, and preparation methods is an asset.
• Safe Food Handling, WHMIS, and/or CPR certification is an asset.
• Excellent English language skills.
COMPENSATION & CONDITIONS:
• Permanent, full-time position
• $80,000.00 per year with applicable overtime pay after 44 hours of work per week
• 40-44 hours of work per week
