Job Description:
Responsibilities of the baker will include the following:
• Prepare specialized doughs for authentic Jamaican patties, hard dough bread, and coco bread; mix batters for traditional spiced buns, and bulla cakes according to heritage recipes.
• Bake mixed doughs and batters, precisely controlling oven temperatures to achieve the signature flaky yellow crust on patties and the specific density required for traditional heavy-crumb loaves.
• Supervise and perform the intricate hand-crimping of patty crusts and the structural braiding of specialty breads.
• Apply traditional glazes to spice buns and finish Jamaican-style specialty cakes ensuring authentic presentation for customer orders.
• Monitor production to ensure all products meet Allan’s Bakery standards for spice profile, crust texture, and filling consistency (for ex: preventing bursting in savory pastries).
• Plan production schedules to determine the quantity of patties, breads, and seasonal bun and cheese items required to meet high-volume community demand.
• Source and verify the quality of Caribbean-specific ingredients
• Oversee the specialized merchandising of fresh-baked goods to ensure optimal rotation of perishable breads and pastries.
• Conduct routine technical inspections and basic troubleshooting of bakery machinery (e.g., dough sheeters and proofers) to minimize downtime, utilizing a background in electrical systems to ensure a safe work environment.
• Hire, train, and supervise baking personnel, specifically instructing staff on the manual folding and sealing techniques unique to our savory pastry line.

An ideal candidate for this position will have the following skills and qualifications:
? Proven experience producing Jamaican pastries in commercial or bulk production environments.
? Prior experience in commercial baking preferred
? High school diploma preferred
? Strong expertise in Jamaican patty dough preparation and lamination at scale
? Experience managing or supervising bakery or food production staff
? Ability to standardize and scale traditional recipes for manufacturing
? Understanding of batch control, production flow, and consistency management
? Knowledge of commercial bakery equipment and high-volume workflows
This is a full-time position with a fixed hourly wage of $36.00/hour based on minimum 30-hour work week.
