Job Description:

The Senior Sous Chef will be responsible for tasks that focus on leading the day to day activities in the kitchen. This position will be responsible for supporting the culinary leadership team in all areas of the kitchen including leading cooks in their duties, food production, waste control, and ensuring guest satisfaction is achieved while maintaining the operating standards. Our Senior Sous Chefs have a proven track record of cooking in a demanding environment as well as experience in recruiting, training, development and overall management of their Cooks. Our Sous Chefs are hands on with cooking and managing their teams.

Terms of the Position:

• Start Date: As soon as possible

• Hours: Full-time, permanent/indeterminate position (44 hours/week)

• Salary: $36.00/hour

Job Duties:

• Communicates the restaurant's vision to all team members and leads by example.
• Reinforces the DRC’s Values & Beliefs daily and inspires the team with his/her exciting vision for the restaurant's future
• Consistently monitors kitchen operations and cleanliness
• Builds and maintains relationships with team members and Front Of House management alike
• Follows proper ordering, inventory and receiving procedures
• Shows leadership in creating a culture that revolves around the experience and enjoyment of food and cooking
• Propose new menu ideas to Chef de Cuisine and Executive Chef
• Demonstrates high personal integrity, business ethics and takes every opportunity to promote the restaurant
• Give suggestions to Chef de Cuisine and Executive Chef on how to improve the kitchen area, process/procedures, etc.
• Conducts recruitment and selection, training and development initiatives as well as performance management and employee coaching
• Uses conflict/resolution and problem solving skills
• Other duties or responsibilities as assigned or required
• Lead team by example to exhibit, encourage and motivate DRC’s Values & Beliefs

Education and Experience

• Work experience: Minimum five (5) years cooking experience in a fast-paced restaurant environment
• Culinary degree/diploma and/or the equivalent in education and experience
• Must have previous Sous Chef or Chef de Cuisine experience in a similar environment
• Must have culinary experience in Mexican cuisine and demonstrate knowledge of modern and traditional Mexican cuisine with a focus on authentic and modern regional ingredients, flavour profiles, and dishes.

Working Conditions:

• Kitchen environment where there is physical discomfort due to temperature, dust, noise, and the like
• Frequent lifting and carrying up to 80 lbs
• Standing and walking required for 100% of the work time
• Regular interruptions and multiple demands
• Must be able to work flexible hours including days, evenings, nights, weekends and holidays
